Alcohol – beer – wine

We are a small batch craft distillery, established in 2015, located in Johnstown, Ontario, Canada overlooking the historic Windmill Point and St. Lawrence River. We specialize in the production of certified organic spirits and operate as a green company. We are also completely grain to glass – mashing, fermenting and distilling on site. We do not use Neutral Grain Spirit (NGS).

We have five spirits currently available, and three are made with all local organic grains – two are made from organic sugar cane. The five spirits are:

• Von Schoultz Vodka
• Conestoga Gin
• Prescott White Rye
• 1000 Island Moonshine
• Lighthouse Shine

We use pot stills and double distill our spirits. This renders a smoother product that is very clean.

We use local organic grains for our vodka, gin and rye. We are one of the largest capacity craft distilleries in Ontario.

Available at our distillery store, through our online shop, and at select LCBO outlets.

The Transition Framework

Resilience is the ability of a system or community to withstand impacts from outside. An indicator is a good way of measuring that. Conventionally, the principal way of measuring a reducing carbon footprint is CO2 emissions. However, we firmly believe that cutting carbon while failing to build resilience is an insufficient response when you’re trying to address multiple shocks such as peak oil, climate change and the economic crisis together.
